The Saint-Aubin appellation has been long overshadowed by its esteemed neighbours Meursault, Chassagne-Montrachet and Puligny-Montrachet, but today is gaining recognition thanks to Premier Cru climates such as Sur Gamay. The terroir consists of clay?limestone and marly soils with a subsoil rich in active limestone, a key factor in the wine’s tension and minerality. The vinification process uses precise, traditional methods: hand-harvests, gentle pressing, fermentation in oak barrels and 12 months of ageing on fine lees with minimal stirring to preserve the wine’s purity.
The glass shows a pale and bright yellow colour. The nose opens with notes of white flowers, ripe lemon and dried fruit, capped off with a hint of smoke. The attack on the palate is lively and direct, with a taut, crisp structure; the wine unfolds with beautiful complexity, leading to a salty, lingering finish.
