Having acquired a real reputation with the wines from his trade, since 2006, with the help of his son, Dominique Laurent has also created a small producer-farming establishment from vineyards leased to a winemaker of Vosne-Romanée. He does not deal with vinification but élevage and bottling. Nevertheless, he supervises vinification. The father and son like to work grape musts that have not been destemmed and to mature their wines without sulphur. They use new barrels, the signature of the maison. Dominique Laurent's entire range of wines is characterised by a high degree of purity and to be accessible to all ages. This recipe has proved its worth to fans all over the world.
Although Bourgogne Côte de Beaune is a regional appellation, here it encompasses plots ideally positioned on high‑quality terroirs close to renowned climats. Dominique Laurent, a former professionally trained pastry chef and now one of Burgundy’s most exacting micro‑négociants, vinifies this cuvée as he would a Grand Cru, with the utmost respect for its terroir. The locality of Les Forges lies close to Meursault on deep clay-limestone soils that lend the wine richness, fullness and a fine mineral tension. The Chardonnay grapes are harvested by hand and gently pressed in whole clusters. Fermentation takes place in Burgundian barrels (228‑litre pièces) using indigenous yeasts. A long 18‑month ageing on fine lees, without lee stirring, allows the wine to retain both purity and balance.
In the glass, it displays a superb pale golden hue. The nose opens with subtle aromas of white blossom, ripe pear and fresh hazelnut, underlined by an elegant buttery touch. On the palate, the attack is generous, with a silky texture, bright acidity and a chalky mineral finish.
