Now under the direction of Périne Chartogne Baillette, Champagne Pierre Baillette presents Cœur de Craie, an Extra Brut Blanc de Noirs Premier Cru. As its name suggests, it is made exclusively from Pinot Noir. The vines are planted in the village of Rilly-la-Montagne, south of Reims, Champagne’s largest city. Here, they benefit from a northerly aspect and the gentle slopes of the Montagne de Reims. The soils consist predominantly of Campanian chalk, which gives the cuvée its name, alongside limestone and clay. In the vineyard, the rows are tended with respect for the living ecosystem, without the use of insecticides or herbicide.
In the cellar, fermentation takes place with native yeasts in vats over many months. he wine is then aged for almost a year in 500-litre oak barrels before being bottled unfiltered.
