Discover Pierre Baillette through this first cuvée, a fine expression of the estate’s expertise that brings together all the grape varieties grown in its vineyards. The blend comprises 60% Chardonnay, 20% Pinot Meunier and 20% Pinot Noir. The vines are planted around the village of Trois-Puits, south of Reims. Here, they benefit from a northerly aspect and gently undulating slopes. The soils consist predominantly of Campanian chalk, complemented by limestone and clay. The vines are tended with respect for the environment by Périne Chartogne Baillette. Herbicides are never used, and particular attention is paid to encouraging biodiversity.
Fermentation takes place with native yeasts in vats over several months. The wine is then aged for 10 months, 40% in 350-litre oak casks and the remainder in enamel-lined vats. It is bottled unfiltered.
