Emilien Feneuil is one of Champagne’s most talented young winegrowers, unafraid to challenge convention as he carves out a place among the region’s rising stars. This Coteaux Champenois Les Goulats is a perfect example: a still wine made exclusively from Pinot Noir. The vines are planted in the commune of Chamery, where clay and limestone soils provide an excellent terroir. The gentle slopes, shaped by numerous small valleys, give the vines a range of different aspects. Emilien practises sustainable viticulture with great respect for the environment, eliminating herbicides, insecticides and all chemical inputs from his parcels.
In the cellar, the philosophy remains the same, with a low-intervention approach to winemaking Following manual harvests, the whole bunches macerate for around 10 hours before spontaneous fermentation with native yeasts takes place in seasoned oak barrels. The wine is subsequently aged on its lees for almost four years.
