Le Carré, from the Côtes du Jura appellation, expertly captures the artisanal renaissance of the Jura vineyards. The vines stretch across marl-limestone slopes which gives the wine a distinctive character, balancing mountain freshness and mineral complexity. The grapes are harvested by hand at optimal maturity before being gently pressed in whole bunches. Fermentation takes place naturally with indigenous yeasts, followed by extended ageing on fine lees in demi-muids without stirring. No sulphur is added until bottling, preserving the aromatic integrity of the grape variety.
The glass shows a pale yellow colour with silver hues. The nose is delightfully pure with notes of gunflint, ripe citrus fruits, white flowers and a hint of salt. On the palate, the wine is taut and direct with a vibrant minerality. It is accompanied by a precise and subtly textured substance. The long and salty finish evokes the great whites from the terroir.
