Information
This wine is a free and intensely Mediterranean red, produced from the Terrasses de Cosprons, a natural amphitheatre located on the hillsides between Collioure and Banyuls, where the vineyards roll into the sea. The Cosprons terroir – with its rather poor but well-drained brown and black schist soils – forces the vine to root deeply. The wine is made using natural methods and no additives are added. The grapes are harvested by hand, partially destemmed and then left to macerate for a long stint. The juices are fermented using indigenous yeasts and are aged for around 12 months. Sulphur is not added to the wine, and it is also not fined nor filtered.
The wine has a deep, intense purple colour. The nose opens with notes of heath, black olives, wild blackberries and white pepper. On the palate, the wine is full-bodied and fleshy but taut, carried by a salty freshness and a subtle bitterness, leading to a long, spicy finish. It is a deep yet airy red wine, injected with the character of its landscape.
