
Information
This unique white wine is produced on the Terrasses de Cosprons terroir, suspended between the sky and the Mediterranean, on the heights of Port-Vendres, just a stone's throw away from the village of Collioure. Terrasses de Cosprons is a natural amphitheatre of brown and black schist, where the vines sink their roots deep into the cracked rock. The grapes are vinified naturally and nothing artificial is added during the process. The harvest is done by hand, and the grapes are lightly pressed in whole bunches before fermentation is carried out using indigenous yeasts. The lees are not stirred, and the wine is not filtered after fermentation. Lastly, the wine is aged on lees for around ten months.
Throughout the tasting, the wine captivates with its pale, slightly golden colour. The nose evokes aromas of candied lemon, sea spray and fresh almond with a hint of saltiness. On the palate, the wine is tense and crystalline, with a persistent saline structure, beautiful length and a slightly smoky finish; the signature of schist soil.
