This wine is a pure and bold expression of the Causses terroir, a region that eventually carefully blends itself into the hilltops of Tarn, in the heart of France’s southwest. The terroir is marked by chalky, stony and well-drained soils, which give the wines a beautiful minerality. These soils have a low water retention capacity, which forces the vines to grow deep roots, creating a high concentration of flavour in the wine. The wine is made with the utmost respect for nature, for example, the grapes are harvested by hand and lightly pressed before spontaneous fermentation with indigenous yeasts begins. The wine is aged on fine lees for several months, giving it texture whilst also preserving a wonderful freshness.
The wine is bright, pale yellow in colour, slightly golden. The nose releases fresh aromas of candied lemon and white flowers with a mineral undertone. On the palate, the wine is vibrant and dry, with a clean attack and great freshness.
