The Causses terroir is a high-altitude, arid plateau of hard limestone, where the extreme conditions produce concentrated grapes that reveal a unique character. Although this vintage does not claim an AOC designation, it fully embodies the free-spirited and deeply rooted character of south-western France, with its artisanal approach and strong sense of identity. As suggested by its name, the vines are located on a marked geological fault line with steep slopes exposed to northern winds. The shallow, poor limestone soils result in low yields, producing high-quality grapes. The grapes are harvested by hand and gently pressed before being fermented using indigenous yeasts and without the addition of additives. The wine gains fullness and complexity during its long ageing period on fine lees, which it completes without excessive stirring.
The wine has a pale yellow colour with golden hues. The nose is pure and intense with aromas of crisp white fruits, candied citrus and flint. The attack on the palate is tense before the wine rounds out, gaining in fullness with a beautiful chalky texture that is vibrant and persistent.
