In the grand tradition of Anjou sweet wines, Éric Callcut shakes up the norms with Le Paradis Cire Violette – an extraordinary sweet wine, vibrant with sincerity and freely classified as a Vin de Table. The vines grow on a south-east facing hillside and the grapes are harvested by hand in several rounds, only once they are overripe. In the cellar, fermentation is slow and spontaneous, enhanced by indigenous yeasts. The wine is aged in old barrels for 18 months during which the lees are not stirred, and it is not filtered.
Cire Violette has a deep golden colour with amber hues. The nose is sumptuous, revealing aromas of chestnut honey, dried apricot, saffron, orange peel and beeswax. This wine is smooth and indulgent on the palate without being heavy. It is carried by a vibrant acidity and a remarkably salty, almost tannic finish, which is the hallmark of all great natural sweet wines.
