Despite being produced in Anjou, this white wine is classified as a Vin de Table, freeing it from the constraints of appellation rules and allowing the full breadth of the winemaker's skill, alongside the terroir, to fully express themselves. The vines are nestled on shallow brown soils derived from weathered schist, giving it tension and salinity, which are essential elements in the structure of this exceptional white wine. The grapes are grown organically, despite not being certified as such, and they are all hand-harvested at optimal ripeness. During the vinification process, the grapes are pressed gently and slowly, allowing spontaneous fermentation to occur. No additives or sulphur are used, and the wine is left unfiltered. The wine is aged on lees in old barrels for 12 months, embracing a truly natural style.
The wine reveals a cloudy, pale gold colour with amber hues. The nose is wild, blending aromas of beeswax, citrus peel and baked apple. The palate is dense and striking, enhanced by sharp acidity, an almost tannic texture and a mineral finish.
