L’Opiniâtre comes from the Grand cru village of Verzy, in the heart of the Montagne de Reims. The region’s cool climate, the moderating influence of the surrounding forests and the vineyard’s south-east-facing aspect encourage the Chardonnay grapes to ripen slowly and evenly. The manual harvests are followed by meticulous plot-by-plot sorting. Fermentation begins spontaneously with native yeasts, while full malolactic fermentation takes place naturally. The wine is then aged on fine lees for 11 months, without stirring, before undergoing extended ageing on laths prior to disgorgement.
The golden hue graced with silvery highlights is enlivened by a fine, persistent bead. The bouquet opens with aromas of ripe pear, damp chalk and toasted hazelnut, complemented by delicate floral notes and preserved citrus. The palate is lively, linear and remarkably precise, leading to a long, saline finish with a pronounced mineral character.
