The Aux Champs Perdrix locality, nestled in the heart of the prestigious Côte de Nuits, enjoys a terroir particularly well suited to viticulture. Its limestone-clay soils, rich in minerals, lend the wine both structure and finesse. The gentle south-east-facing slopes ensure slow, even ripening, encouraging excellent flavour concentration while preserving freshness. The manual harvests allow for the careful selection of the finest bunches. Following a short cold maceration, fermentation takes place in open vats. The wine is then aged in oak casks, 30% of which are new, for 12 months, allowing it to gain structure while subtly integrating the influence of the oak.
The wine displays a deep, brilliant garnet-red hue with purplish highlights. The complex, elegant nose combines aromas of ripe red berries with delicate notes of cinnamon. Supple and fresh on the first sip, the palate is supported by fine, elegant tannins and a vibrant mineral backbone.
