Having lived in Paris for a few years, François de Nicolaÿ, chose to take over the running of the family domain in Savigny-lès-Beaune (Chandon de Briailles) in the early 2000s. Alongside this prestigious estate, he decided to start his own wine trading business under his own name – François de Nicolaÿ.
For these wines, he uses grapes that are certified organic or biodynamic so that he can show off their full characteristics and the terroirs where they grow. Vinification and ageing are conducted naturally without any additives (some wines are natural while others have a bit of sugar added to them) in an old cellar in Savigny-Lès-Beaune. There is no pumping over or punching down, neither is the wine filtered or clarified. Tasting these wines will leave you wanting more; they are delicious with an airy character. We also enjoy them for their purity.
As the business grows as does the range while the prices remain reasonable for the appellations.
Meursault, one of the most iconic appellations of the Côte de Beaune, lies at the heart of the Burgundy winemaking landscape. The Sous la Velle climat lies just below the village, in a historically qualitative area close to the ancient springs of the vineyard. Here, white marl and pebbly limestone ensure effective drainage while nourishing the vines. The grapes are carefully hand-picked at peak ripeness. Slow, gentle pressing precedes alcoholic fermentation, carried out spontaneously in oak casks.
The wine displays a light yellow hue with golden highlights. The elegant, expressive nose reveals a subtle bouquet of white flowers, citrus zest, fresh pear and almond paste, all underpinned by a lightly buttery, smoky undertone. The palate opens with a precise, linear attack, followed by breadth and balance sustained by fine mineral tension. The texture is silky, almost chalky, leading to a long and persistent finish with a saline edge.
