Having lived in Paris for a few years, François de Nicolaÿ, chose to take over the running of the family domain in Savigny-lès-Beaune (Chandon de Briailles) in the early 2000s. Alongside this prestigious estate, he decided to start his own wine trading business under his own name – François de Nicolaÿ.
For these wines, he uses grapes that are certified organic or biodynamic so that he can show off their full characteristics and the terroirs where they grow. Vinification and ageing are conducted naturally without any additives (some wines are natural while others have a bit of sugar added to them) in an old cellar in Savigny-Lès-Beaune. There is no pumping over or punching down, neither is the wine filtered or clarified. Tasting these wines will leave you wanting more; they are delicious with an airy character. We also enjoy them for their purity.
As the business grows as does the range while the prices remain reasonable for the appellations.
Les Briquottes locality rests on deep clay-limestone soils enriched with red clays and gravel. Clay contributes volume and fullness, while limestone brings a delicate tension. Harvesting is done by hand, with rigorous sorting carried out directly in the vineyard. Fermentation takes place in open wooden vats, using only native yeasts. Maceration is long and gentle, with moderate pump-overs favouring delicate extraction. Ageing continues for 12 months in French oak casks, with only a small proportion of new wood.
The brilliant, clear ruby hue displays delicate garnet glints reflecting youth and elegance. The nose reveals vibrant fruit and a delicate floral expression, lifted by touches of sweet spice and fresh peony. On the palate, the attack is fluid and precise, the wine gradually gaining in intensity. The tannins are fine-grained and smooth, the texture is juicy, and the whole is a perfect balance of indulgence and minerality.
