The family estate of Charles Dufour cultivates Chardonnay vines in Landreville, in the Aube department, in the Côte des Bar, one of the southernmost sectors of the Champagne region. Here, soils are predominantly composed of calcareous marl and clay. The Super 4 cuvée originates from four Chardonnay parcels farmed without chemical weedkillers, with the utmost attention paid to the vines, the soil and all living organisms. In the winery, winemaking follows a low-intervention philosophy. Alcoholic fermentation starts naturally with native yeasts. malolactic fermentation also occurs naturally. Ageing lasts around ten months in casks on full lees, without stirring or fining.
The pale yellow hue reveals silvery glints, enhanced by a fine effervescence. The nose is refined and chiselled, opening with candied lemon, chalk, fresh hazelnut, linden blossom and apple. The palate displays a lively, refreshing acidity, lifted by a remarkable mineral backbone.
