Les Mirandes is born of a singular terroir standing on a limestone plateau with outcrops of grey marl and schist, set high above the Agly Valley. These poor, free-draining soils, combined with moderate altitude and the constant influence of the sea and mountain winds, allow for slow ripening, great concentration and natural tension in the wines. Harvesting is done by hand in small crates, with rigorous sorting in the vineyard. The winemaking process is free of inputs and includes partial destemming, gentle maceration in concrete vats over several weeks, then spontaneous fermentation. The wine is subsequently aged for 18 months in old casks, with no new oak, to preserve purity and terroir expression.
In the glass, Les Mirandes reveals a rich, luminous garnet hue. The bewitching nose is dominated by ripe black fruit, garrigue and black pepper notes, with a touch of graphite and delicate undergrowth. The palate reveals a dense and fleshy texture lifted by remarkable freshness, smooth tannins and a mineral backbone that extends to the finish with elegance.
