Cul de Brey is a dry white wine from the Arbois appellation, one of the celebrated historic winegrowing regions in France. The terroir is defined by grey and blue clay-rich Lias marl, which imparts a mineral, saline backbone while contributing to the wine’s strength and ageing potential. The winemaking process follows the estate’s natural philosophy. The Chardonnay grapes are harvested by hand at peak ripeness, then pressed slowly. Fermentation takes place without added yeasts or inputs. The wine then ages for around 18 months in seasoned casks on the lees.
The wine displays a luminous straw yellow hue. The nose opens with fine aromas of white flowers, fresh hazelnut, flint and candied lemon, complemented by a delicate lactic touch. On the palate, it is lively, saline, broad and precise, with fine length and the Jura marl hallmark chalky minerality.
