Situated at the heart of the Côte de Nuits, Nuits-Saint-Georges is one of Burgundy’s most iconic appellations. The Les Chaillots climat is a locality nestled at the foot of the slope in the commune of Nuits-Saint-Georges, its name evokes the many small pebbles scattered across the surface of this poor, well-drained terroir. The soils are composed of limestone marl mixed with stony alluviums. Harvesting is done by entirely hand, followed by meticulous sorting. to retain only perfectly ripe grapes. After partial destalking, fermentation takes place in temperature-controlled stainless-steel vats, with regular punch-downs and pump-overs. Ageing lasts 18 months in French oak casks, with only a small proportion of new wood.
The wine displays an intense ruby-red hue with garnet highlights. The complex nose offers a rich aromatic palette of black cherry, blackberry and spiced plum, lifted by violet, fine leather, blond tobacco and a subtle toasted touch. The first sip is generous and structured. Powerful yet well-integrated tannins that give the wine a firm backbone.
