Cédric Bouchard, son of a winemaker, runs the estate of the same name based in Aube, on the Côte des Bar. He runs the small domain of Roses de Jeanne (one hectare), located in the Ource Valley, as well as Inflorescence in Val Vilaine. His agricultural methods are reasoned and controlled, quite close to the principles of biodynamics. His champagnes are renowned and sought after, production being very limited.
Roses de Jeanne Champagne created in 2000 by Cédric Bouchard stems from the Côte des Bar in the Aube region. The grapes used to elaborate the cuvée come from clay-limestone soils, where Pinot Noir develops finesse, mineral tension and precision on the palate. The grapes are hand-harvested before a gentle pressing. Fermentation occurs spontaneously with native yeasts. No dosage is added, and the entire winemaking process is carried out with minimal intervention.
In the glass, the Champagne shows a very pale yellow hue, animated by a discreet, elegant bead that underscores its satiny texture. The nose is pure and lively, opening on fresh white citrus, delicate white flowers and a strikingly expressive chalky minerality. On the palate, the attack is precise and vibrant, driven by a flash of lime and marked salinity. The fine texture, perfectly judged tension and impeccable balance lead to an elegant, lingering finish.
