Cédric Bouchard, son of a winemaker, runs the estate of the same name based in Aube, on the Côte des Bar. He runs the small domain of Roses de Jeanne (one hectare), located in the Ource Valley, as well as Inflorescence in Val Vilaine. His agricultural methods are reasoned and controlled, quite close to the principles of biodynamics. His champagnes are renowned and sought after, production being very limited.

The Inflorescence La Parcelle cuvée offers a rather reserved bouquet, which opens into fruity notes (nuts such as almonds, and red berries). The palate reveals substance, an attractive bitterness and fruity aromas, grape pomace and a pleasant mineral tension.
