About the producer

Domaine du Jaugaret is a rare and sought-after estate in Saint-Julien, at the heart of the Médoc appellation, covering a mere 1.32 hectares. Founded several generations ago, the estate has been run by Jean-François Fillastre since 1983, following a career as a glassblower. Faithful to a philosophy rooted in tradition and respect for nature, he is committed to producing wines in the old-fashioned way, without pesticides or herbicides, favouring the most natural approach possible in the vineyard.
Despite mechanical harvesting, traditional methods remain central: a ratchet press is still used, the wines are fined with egg whites, and particular care is devoted to ageing. The wines spend an average of three years in barriques, with the ageing carefully managed through the use of barrels that are retained for around a decade, preventing excessive oak influence from masking the expression of the terroir. The estate grows several of the region’s classic grape varieties, including Cabernet Sauvignon, Merlot, Malbec and Petit Verdot, across seven to eight small parcels.
With an extremely limited production of around 6,000 bottles, exclusively produced in the best vintages, Domaine du Jaugaret’s wines are a rare find for those seeking singular, authentic wines. The wines are distinguished by their great depth, subtle balance and pure expression of the Saint-Julien terroir, offering a natural and elegant alternative to more conventional styles. Older vintages, some dating back to around 1930, bear witness to their remarkable ageing potential and the complexity that rewards patient collectors.
This rare and sought-after estate is one of the Médoc’s hidden gems, deserving the attention of anyone seeking authentic expressions of terroir shaped by respect, tradition and passion. Both the rarity and the quality of its wines have made them highly sought after by discerning wine lovers.
