Les Pillot have been present in Chassagne since the 19th century on several independent domaines. Laurent and Marie-Anne work over 15 hectares on many appellations of the Côte de Beaune. All their wines are vinified and aged in their cellar of Chassagne-Montrachet, reconciling modern equipment with respect for the soil.
Pommard, set in the Côte de Beaune, is home to the Pinot Noir vines of Clos de Verger, a Premier Cru climat. Here, clay-limestone soils provide balanced water retention and encourage slow, even ripening, allowing the vines to develop complex aromatics and an elegant tannic frame. Once optimal ripeness is reached, the grapes are harvested by hand and carefully sorted. Fermentation is spontaneous in temperature-controlled stainless-steel vats, and the wine is then aged in cask for 12 months with a proportion of new oak.
The brilliant ruby-red hue promises an expressive bouquet. The nose delivers intense ripe red fruit aromas, rose and violet floral notes, and a gentle hint of spice. On the palate, fine, well-integrated tannins support a persistent, delicately fruit-driven finish.
