Les Carrelles is crafted from very old vines, between 84 and 87 years old, planted on slopes near Pommard and Chorey-les-Beaune. The draining clay-limestone soils typical of the area impart concentration and complexity. Les Carrelles is a parcel dear to the winemaker. The naturally low yields and advanced age of the vines reinforce the wine’s distinctive character. Harvesting is handled plot by plot to preserve the identity of the site. In the winery, the fruit undergoes long macerations in whole clusters, 14 days with partial stems, then a further 18 days including the stems. Alcoholic fermentation is spontaneous. The wine is then aged in barriques for sixteen months before bottling without fining or filtration.
The wine reveals a light red hue, while the bouquet offers notes of ripe red and black fruit, lifted by floral and spicy tones such as cinnamon. On the palate, a crisp acidity weaves with fine yet present tannins, culminating in a long, lively finish.
