Originally from Burgundy, Morgane Seuillot spent several years working with biodynamic estates in Australia before returning to settle in Mavilly-Mandelot, in the Hautes-Côtes de Beaune, in 2016. Her three hectares of vines are spread across seven plots in the villages of Mavilly and Meloisy, planted to Chardonnay, Aligoté, Pinot Noir and Gamay. The vineyards are cultivated as naturally as possible, entirely by hand and worked with a horse. An undeniable advantage given that her father has long been ploughing the soils for numerous Burgundian estates. In the winery, the wines have been natural from the very first vintage. The grapes are vinified as whole clusters, and pressing is carried out with an old wooden press. No additives, no sulphur. Everything is done by hand, right down to the labels, cut individually from beautiful handmade paper from an Auvergne mill that incorporates small local flowers. Les Coteaux Bourguignons is a modern regional appellation covering red, white and rosé wines produced throughout Burgundy. The Pinot Noir parcels behind this cuvée lie in the Hautes-Côtes de Beaune. Their predominantly limestone and marl soils, with stony sections, produce grapes that ripen slowly, yielding red wines driven by energy, freshness and clearly defined fruit. The estate follows a natural, plot-by-plot approach to vinification, and the cuvée is aged for twelve months in casks.
In the glass, it reveals a light ruby hue. The expressive bouquet shows small red and black berries – raspberry and morello cherry – alongside notes of wild herbs and flowers. On the palate, fine acidity is perfectly balanced with present tannins, leading into a sapid, lightly peppery finish.
