From Pinot Noir and Chardonnay vines in the Premier Cru of Écueil, this Extra Brut cuvée benefits from a distinctive terroir. Its clay-limestone soils mixed with sand and limestone fragments offer excellent drainage and intense minerality, bringing finesse and liveliness to the wine. The grapes are harvested by hand, berry by berry, to ensure optimal ripeness and aromatic purity. The first fermentation preserves freshness and the expression of the terroir. After blending, the second fermentation in the bottle follows the traditional method, with a prolonged lees ageing of thirty months, allowing the wine to gain depth and complexity.
With minimal dosage, this Extra Brut Champagne retains remarkable tension and freshness. In the glass, the luminous straw-yellow hue is lifted by a fine, persistent bead. The nose opens with candied citrus, yellow apple and floral notes, together with a touch of brioche and hazelnut. The palate is lively, saline, mineral and structured.
