Elise Bougy, a spirited and passionate winemaker was barely 35 when she took over the Champagne vineyards passed down in her family since 1920. There, she carefully preserves the traditional methods inherited from her family, while infusing them with a modern edge. Looking to the future and committed to the environment, the estate is in the process of converting to organic and biodynamic farming. The majority of the vineyard, covering three hectares, lies at the foot of the Reims Mountain, in the Premier Cru village of Les Mesneux, while a third of the vines are planted in the Chétillons terroir. In 2011, Elise Bougy founded Les Pétillantes du Vin, an organisation that aims to share her passion for the sector and her knowledge of wine with women, while helping them to set up their own businesses. Her desire and the joy of imparting her knowledge have encouraged her to further develop her skills and to persevere in her firm environmental commitment.

This Champagne is an exceptional cuvée from the Montagne de Reims. The Premier Cru of Les Mesneux is home to Pinot Noir and Pinot Meunier vines rooted in stony, clay-limestone soils that bring tension, minerality and freshness. Planted in the 1960s, this parcel affords steady ripening and the refined aromatic expression typical of Blanc de Noirs. Vinification is carried out naturally, with spontaneous fermentation driven by native yeasts. The wine then spends eight months in 600-litre casks before a prolonged lees ageing of forty-four months.
The wine displays a pale yellow hue shows subtle silvery glints. The nose combines wild strawberry and melon, lifted by mineral nuances. The palate is broad and complex, unfolding notes of flaky pastry, fresh fruit and white flowers, leading into a finish that is both persistent and vibrant.
