A blend of two parcels with different profiles, this cuvée is beautifully balanced with ample and silky tannins on the palette. More info

Philippe Chéron owns two parcels in Les Champonnets, situated along the northern extension of Ruchottes Chambertin, approximately 100 metres from each other. The first parcel, planted in 1988, covers an area of 410 square metres and the soil is made up of Premeaux limestone in the upper part, whereas the soil contains more clay in the lower part. The vines are still young and very vigorous, so they need to be contained through short cane pruning and thinning the bunches. These vines produce a powerful wine, distinguished by notes of spices. The second parcel of 700 square metres contains vines with an average age of 70 years, which are less vigorous and produce a more supple and finer wine. Grapes from the two parcels are vinified and aged separately, before being blended in a vat around one month before bottling.
The mix of the two plots creates a perfectly balanced cuvée, which evokes sublime aromas of cherry, prune and sweet spices, while ample and silky tannins can be found on the palate. A wine which can be left to mature in the cellar for around 10 years.

Gevrey-Chambertin 1er Cru Champonnet Domaine du Couvent serve at a temperature of 15°C. It will pair perfectly with the following dishes: Mont d'Or, Chevreuil aux airelles, Daube de joue de boeuf.
