More infoAnd so begins the lineage. Young winemaker Fanny Sabre honed her skills alongside Philippe Pacalet, the renowned winemaker celebrated for his natural wines. It comes as no surprise, then, that she produces a Chorey-lès-Beaune of remarkable quality. The foundation of this exceptional cuvée lies in outstanding grapes, born of her attentive and respectful approach to cultivating and nurturing her Chardonnay vines. The soils are ploughed and cover-cropped to preserve microbial life, organic treatments are applied, and yields of this noble grape variety are strictly controlled through green harvesting and shoot thinning, depending on the vintage. Once they reach the winery, the grapes are destemmed before being directly pressed and transferred to barrels. Fermentation occurs in oak casks, and regular stirring of the lees is performed.
On tasting, the wine reveals a pale golden hue with green highlights and a delicate aromatic bouquet, opening with hawthorn and acacia blossoms, citrus, lemongrass, and hints of honey. The palate displays fine density, balanced by a bright, refreshing acidity
To appreciate this wine at its best, allow it to rest in your cellar for a minimum of three years, and serve it alongside cheese dishes or freshwater fish.
