The Aloxe-Corton from Domaine Maxime Dubuet Boillot is a prestigious Côte de Beaune cuvée produced from a two-hectare vineyard planted on iron-rich clay-limestone soils. The grapes are carefully hand-picked and rigorously sorted to ensure that only the best grapes are kept. Vinification follows traditional methods, with cold maceration followed by fermentation in stainless steel vats for around three weeks, allowing delicate extraction of aromas and tannins. The wine is aged in oak casks, with 20% new oak, for 12 to 18 months, giving the juice subtle woody notes.
On the nose, this nectar reveals complex aromas of ripe red fruit, like cherry and raspberry, intertwined with spicy and lightly smoky notes. On the palate, it is beautifully structured, with silky tannins and a long finish, marked by flavours of black fruit, undergrowth and a touch of minerality.

About the Producer Dubuet Boillot

Born among the vines of Volnay, his path initially led him to a career as a race car mechanic before steering back to his true calling. Well versed in motorsports, he also masters viticulture, earning a BTS in viticulture and oenology in Beaune. In 2016, he took over the six hectares of vines belonging to his maternal grandfather, Pierre Boillot. The estate spans prestigious appellations such as Volnay and Pommard, including the premier crus Les Pitures and En Largillière, as well as Coteaux Bourguignons and IGP Sainte-Marie-la-Blanche. Today, Maxime Dubuet-Boillot perpetuates his family’s winemaking legacy, crafting refined and elegant wines through meticulous vineyard work and minimal intervention in the cellar. Though not officially certified in biodynamics, his practices closely align with its principles.
