In the winery, after a gentle pressing, fermentation is triggered by native yeasts in stainless steel, with no wood, to maintain the cru’s natural tension. The wine is then aged for nine months on fine lees, building texture without sacrificing purity.
In the glass, it displays a pale-yellow hue sublimated by green glints. The wine opens with a complex nose of ripe citrus fruit, oyster shell, verbena and wet chalk. On the palate, the clean initial drop gives way to a slightly rounder, supple texture, lifted by a saline, chalky backbone, and culminating in a long, stony, refreshingly zesty finish.

About the Producer Jérémy Arnaud
Jérémy Arnaud is unquestionably one of Chablis’s brightest young talents. After completing his training in Chablis, Meursault, Beaune and Pauillac, the young oenologist bought a plot of less than one hectare in Chablis to shape his terroirs. Today, the estate of this winegrower’s son extends over more than five hectares scattered across prestigious locations such as Huées and Vau de Vey. In the vineyard, a low-intervention approach is adopted, with precise soil cultivation and natural grass cover. Much of the work is performed manually and pruning is rigorous. Jérémy Arnaud is committed to producing wines with a distinct identity that reflect the terroir.
Following manual harvesting, the Chardonnay grapes are pressed and fermented in stainless steel vats at low temperatures. The juices are aged in vats, oak barrels and ovoid vats. The resulting wines are pure, refined and elegant, Each bottle perfectly reflects the winemaker’s expertise and is a crystalline expression of Chablis that captures both place and precision.
