The wine
This wine comes from parcels near Pupillin, widely regarded as the ‘vignerons’ village’ of the Jura. The soils here are dominated by grey and blue marl from the Jurassic Lias, rich in clay, with pockets of limestone scree higher up the slope. Combined with the altitude and an east?–?to south-east exposure, this terroir helps preserve the grapes’ natural acidity. In the vineyard, manual harvesting is carried out using small crates. The fruit then undergoes semi-carbonic maceration and ferments spontaneously with native yeasts. Ageing follows for about eight months in well-seasoned oak casks.
In the glass, the wine displays a light-red hue. The expressive nose opens with aromas of fresh redcurrant and crushed raspberry, lifted by a touch of white pepper, a hint of green stalks and delicate smoky notes. On the palate, the attack is juicy and vibrant, carried by a supple, fluid texture and smooth tannins. The lively and persistent finish is marked by bright red-berry flavours and a subtle mineral, almost saline tension.
