The wine
Thanks to its proximity to the great names of Puligny-Montrachet and Chevalier-Montrachet, En Rémilly is one of the emblematic crus of the Saint-Aubin appellation. Produced in the capable hands of Pierre-Yves Colin-Morey, it reveals a great aromatic complexity and, especially, excellent cellaring potential. Keep it to enjoy with sophisticated dishes.
Created in 2005, the Pierre-Yves Colin Morey domaine extends over 6 hectares on the Saint Aubin and Chassagne-Montrachetet appellations. After learning about his father's domaine (Marc Colin), Pierre-Yves decided to start his own domaine with his wife Caroline Morey. Mentioned by the specialised press as one of the "most gifted winemakers of his generation" (Revue du Vin de France), his wines, mostly from Chassagne, Meursault and Saint Aubin, must be discovered. Pierre-Yves Colin runs this small domaine with his wife Caroline, completing the production by buying grapes (one third of the volume). In the vineyards, responsible and sustainable farming prevails and in the winery, vinification needs little intervention. One of the strong points of this field is the élevage, which is mainly in demi-muids and is very subtle. This name, widely recognised by fans and professionals, is undeniably a safe bet!
