Côtes d'Auvergne Boudes Rouge Henri Chauvet 2022
The wine
À Boudes is one of the highest quality wines of the Côtes d'Auvergne. The vines flourish on a natural, south-facing amphitheatre, protected from the winds, offering a warm and dry microclimate. The volcanic terroir, with a blend of red clays, basalt and limestone, gives this cuvée a mineral texture and remarkable depth. The vines are grown organically and harvested by hand. The vinification process uses natural methods, such as partial destemming, fermentation with indigenous yeasts in open vats, gentle extraction, and ageing in old casks for ten months without filtration or fining.
During the tasting, you can see the ruby-red colour of the wine that is both light and luminous. The nose is marked by aromas of crisp red fruits, accompanied by notes of flowers and sweet spices. The palate is refined and juicy, carried by lively acidity and enhanced by silky tannins, leading delicately to a finish that is both easy to drink and slightly peppery.
Henri Chauvet left banking and office work in 2021, to settle on the gravelly hillsides of the Saint-Nectaire region. Having just turned 30, he obtained an advanced technical diploma in viticulture and winemaking through correspondence and went on to train with Jérôme Bressy at his Gourt de Mautens estate, in the southern Rhône Valley. He subsequently acquired the Sauvat estate, comprising more than ten hectares of vines. Each parcel of Chardonnay, Pinot Noir and Gamay flourishes on volcanic soils composed of blue marl. Henri Chauvet has been converting his vineyard to organic viticulture since the day he arrived, convinced of the benefits for vines and wine and, above all, driven by a desire to get back to the land. Even if his methods have much in common with natural wines, Henri Chauvet doesn’t want to be pigeon-holed, so he retains complete freedom to create his authentic, flavoursome wines.
