Near to Dijon, Domaine de la Cras stretches across the plains on which 5 hectares of Pinot Noir thrive. Belonging to the city of Dijon, the domain is run by Marc Soyard, a producer from the Jura who began his career at Domaine Bizot in Vosne-Romanée. One thing guides the work of this domain: respect for wine via low-intervention vinifications. The vines are grown organically with biodynamic practices. The manual harvests allow for a rigorous selection of the grapes. The fact that the yeasts are natural and very little sulphur is added mean that the wine can express itself. It is matured in oak barrels. This cuvée draws on notes of red fruit, and its flavourful profile flourishes nicely. It should be served at 15-16°C. It will pair nicely with a dish like roasted duck.

About the Producer Domaine de La Cras - Marc Soyard

Domaine de la Cras was bought by the City of Dijon in 2013, and it stretches across 160 hectares between the communes of Dijon, Plombières-lès-Dijon and Corcelles-les-Monts. The idea of this purchase was to preserve the city's green-belt land. Marc Soyard is the wine maker running the 8 hectares of certified organic vines that are worked biodynamically. 5 hectares are planted with Pinot Noir and 3 with Chardonnay. Originally from the Jura, Marc worked for several years at Domaine Bizot in Vosne-Romanée. The most important aspect of his work is his respect for nature. “Wine is a natural thing, a living thing, there's nothing artificial about it.” The vinification carried out involves very little intervention. The wines from this domain can be aged for a few years before being enjoyed.
