More infoTucked away in the heart of a small valley in the Côte de Beaune, between the emblematic communes of Saint-Romain and Meursault, the charming vineyards of Auxey-Duresses are mainly dedicated to growing Pinot Noir. A handful of Chardonnay vines, however, has managed to join the ranks of the inevitable Côte des Blancs wines. Climbing on mostly limestone soils, these vines benefit from an ideal southern exposure. The grapes are harvested by hand at the end of October, when they are at peak ripeness. The Chardonnay grapes are then vinified according to traditional and natural methods, with as little intervention as possible.
The clear, luminous gold-green colour reveals a refined, delicate bouquet of expressive aromas of yellow apples and fresh almonds. The tender and suave palate beautifully affirm the aromas of the nose while building to an incredibly refreshing and flavoursome finish.
About the Producer Domaine de Chassorney - Frédéric Cossard
The son of a farmer, Frédéric Cossard quickly became passionate about wine, becoming a wine broker. Then, in 1996, he seized the opportunity to work on several acres of vines in the communes of Saint-Romain and Auxey-Duresses. He gradually expanded his Chassorney domaine as well. The vineyard now extends over 10 hectares and several appellations (Saint Romain, Auxey-Duresses and Pommard).The vines are worked as naturally as possible, the soil is ploughed and, in the cellar, only native yeast is used. A deep respect for the grapes is at the heart of this winemaker’s philosophy, guiding both his work in the vineyard and practices in the winery. The vines are cultivated as naturally as possible, without chemical treatments, and all harvesting is carried out by hand. Only indigenous yeasts are used, and no sulphur is added to the juice or the wines. As a result, Frédéric produces natural wines that stand apart from the more intensively produced Burgundy wines. Alongside his partner, Laure, he founded a wine trading business in 2006, sourcing the finest grapes from historic appellations such as Meursault and Puligny-Montrachet.
