Mendoza Pintom Subversivo Pinot Noir Canopus 2021

The wine

This unique and special rosé cuvée is produced with Pinot Noir grapes grown on a small plot to the south of the Canopus estate in El Cepillo. The limestone-rich soils are cultivated according to biodynamic principles, combining a natural approach in the cellar and in the vineyards. Producing this sensational cuvée requires three different steps. A first batch of grapes is vinified in steel vats and a second batch in open vats. The third batch macerates in whole bunches of grapes from late harvests with the first batch. The cuvée is then blended to produce a wine that is both flavoursome and refreshing.
The pink colour, adorned with light, bright reflections, reveals an expressive bouquet, marked by the fragrance of fizzy strawberry sweets. The fresh, delicious mouthfeel reveals notes of herbs and hints of undergrowth, culminating in a fruity, thirst-quenching finish.
