The Unfiltered cuvée is produced exclusively from the estate’s most prestigious parcels of Cabernet Sauvignon. The vines flourish perfectly surrounded by abundant woodland, which helps keep the vines cool and protects them from the strong winds of California’s highlands. To grapes are exclusively hand-harvested to preserve this high quality raw material. The fruit are vinified separately to impart a remarkable complexity to the whole. Fermentation is triggered spontaneously by native yeasts naturally present in the berries.
The lemon-yellow colour and green reflections reveal a delicate and expressive nose characterised by aromas of lemon tart combined with notes of camomile. On the palate, the first sip reveals grapefruit aromas, followed by creamy nutty flavours. The whole is a perfect balance of acidity and freshness, gently leading to a long, flavoursome finish.
