Christophe Abbet lets us peer behind the veil on a wine rich in flavours, enriched by a unique ageing process.
More infoChristophe Abbet showcases a captivating Vin de Voile (an oxidised style grown under a layer of flor yeast), in the same style as the Vin de Voiles from Jura. It is in the sanctuary of their limestone vineyards that the grapes are carefully harvested and used to produce this special elixir which bursts with character once oxidised.
After the vinification stage has been completed in stainless steel tanks, the wine is aged for four years in barrels under a veil of flor yeast where it develops a rich texture and a unique salinity.
The wine is golden in colour due to the ageing process. On the palate, an explosion of flavours, with aromas of nougat, walnuts, soy sauce and white truffles. The complexity of this wine is like no other, giving off classic Marsanne aromas with distinctive hints of the flor yeast.
This bottle will pair perfectly with a variety of rich dishes, from foie gras made with game to shellfish bisques and cheese plates. It would also go wonderfully with meat dishes, especially those involving morel mushrooms, as well as with hard cheeses or candied fruits.
