The wine
To the south of Pernand-Vergelesses, domain Chandon de Briailles spans 3 hectares of Pinot Noir, 40-year-old vines. They grow on clay-limestone soils typical for the region. The grapes are hand-picked and vinified according to Burgundian tradition before maturing for between 14 and 18 months in barrels of old oak. This cuvée charms for its fruity and lightly spicy aromas.
About the Producer Hatzidakis
This organic domaine, founded by Haridimos Hatzidakis in 1996, is located on the island of Santorini. This unique terroir, with its volcanic soils whipped by strong winds, requires a special bush pruning technique reminiscent of bird’s nests. Particular attention is paid to the vines and this allows the various indigenous grape varieties grown on this domaine to express themselves fully.
