Lara and Mattia have committed to certified organic viticulture, the vines harvested entirely by hand. In the cellar, the philosophy favours minimal intervention: whole-bunch fermentation, skin contact, co-fermentation, uninhibited malolactic fermentation, no filtration, and ageing in oak.
Pinot Grigio, the estate’s flagship grape variety, is produced in particular as a ‘ramato’ (a local term referring to skin contact maceration). The aim is to produce white wines with character, texture and minerality, true to the identity of the Friuli Grave appellation.
Scarbolo is a family-run estate which was founded in 1982 by Valter Scarbolo in the village of Lauzacco, at the heart of the Friuli Grave DOC appellation in Friuli-Venezia Giulia. The estate is now run by Lara and Mattia, a brother and sister representing the second generation of ownership, who took over in 2022. Fourteen hectares are cultivated using traditional methods around the family winery, on soils comprising clay, sand, limestone and gravel of alluvial and glacial origin, which are particularly well-suited to white wines with great minerality.
