The domain's history began in 2006 when Rémi Dufaitre and Laurence Liatard decided to purchase vines in the areas around Brouilly. Immediately, Rémi Dufaitre stood apart thanks to his organic work and, while selling his berries to the local cooperative, he favoured vinification with native yeasts. Inspired and supported by the icons of the “natural” movement, the two wine growers decide to make their own wine by vinifying the grapes in a traditional manner using carbonic maceration. Today they are an indisputable benchmark in the region.
Rémi Dufaitre produces natural Côtes de Brouilly with about 10 years’ aging potential. We recommend decanting this wine before serving: it can seem a little austere initially, then reveals lovely fruity aromas and a nice minerality. The tannins are perceptible and confer good structure, propitious to pairing with rich foods. Enjoy now or in a few years.
