Nestled along the Ource River in the southern reaches of Champagne, Domaine Ruppert-Leroy tends a very small vineyard with deep respect for the fruit, the soil, and the people, with the sole aim of producing fine wines. Certified organic since 2013 and biodynamic since 2014, the estate crafts expressive wines. This single-varietal Pinot Noir Champagne originates from the Papillon parcel, which gives the cuvée its name, adjoining Fosse Grely. The noble grape variety draws nourishment from clay-limestone soils rich with red clay, and the grapes are harvested by hand with rigorous sorting to ensure pristine quality. Vinification follows a low-intervention philosophy, and fermentation start naturally with native yeasts. The estate uses winter frosts as a natural means of cold stabilisation. The wine is then bottled without fining, filtration, sulphur, or dosage.
A sparkling wine of great complexity and finesse, Papillon bewitches with its indulgent aromas of fleshy stone fruit and stewed apple. The palate is delicate and vibrant, wrapped in a creamy mousse and extending into a long, refreshingly saline lingering finish.
