Produced from the prestigious Monts Luisants climat, this Morey Saint-Denis from Domaine Pierre Girardin is grown in clay and limestone-rich soils, giving the Pinot Noir grapes complexity. Harvests are carried out by hand which allows for rigorous selection of only the most perfectly ripe grapes. The vinification process respects Burgundy traditions while incorporating modern techniques. Fermentation in open vats using indigenous yeasts is carried out before ageing in French oak barrels, of which a percentage are new, giving the wine subtle aromas of vanilla, brioche and spices.
The result is a wine with a deep-red colour, captivating aromas of raspberries, strawberries, black cherries and floral notes enhanced by hints of wood and liquorice. This Morey Saint-Denis is distinguished by its balance, with its acidity, smooth tannins and long finish. This elixir would pair perfectly with red meats, game or mature cheeses.
