Jérôme Saurigny was a passionate and meticulous young winemaker when he decided to establish his own domain and name it after himself. He settled in the heart of the Loire Valley where he cultivates the region’s flagship grape varieties, including Chenin, Cabernet Franc, Cabernet Sauvignon, Gamay, Sauvignon and Grolleau. Passionate about natural wines and committed to protecting biodiversity, the winemaker tends his vines with the greatest respect for the lands. Each parcel receives specific care depending on its needs, to allow the personality of each one to shine through. In the winery, the philosophy is the same. No sulphur or other inputs are used in the vinification process. Fermentation is achieved thanks to naturally occurring yeasts in the grapes. It’s against this peaceful backdrop that the winemaker produces fruity, authentic and flavoursome vintages, perfectly reflecting the region’s grape varieties.
After the devastating frost of 2016, winemaker Jérôme Saurigny decided for the first time to blend together red variety grapes with white variety grapes. Some months later, he took a trip to Japan, during which he discovered, at the heart of Kyushu Island, the Sakurajima volcano, which would inspire the unusual name of his cuvée. In the vineyard, organic farming practices allow each vine to draw all the nutrients needed for their development from the soil. In the cellar, the grapes are naturally vinified using minimal intervention to optimise the natural expression of the grape varieties and the terroir.
The cuvée is a meticulous blend of Cabernet Sauvignon, Cabernet Franc, Chenin Blanc, Sauvignon Blanc, Gamay and Grolleau. The expressive bouquet is marked by delicate aromas of red fruits and the perfectly structured palate reveals fine tannins, which lead to a rich and flavourful finish.
