Information
About the producer

Henri Chauvet left banking and office work in 2021, to settle on the gravelly hillsides of the Saint-Nectaire region. Having just turned 30, he obtained an advanced technical diploma in viticulture and winemaking through correspondence and went on to train with Jérôme Bressy at his Gourt de Mautens estate, in the southern Rhône Valley. He subsequently acquired the Sauvat estate, comprising more than ten hectares of vines. Each parcel of Chardonnay, Pinot Noir and Gamay flourishes on volcanic soils composed of blue marl. Henri Chauvet has been converting his vineyard to organic viticulture since the day he arrived, convinced of the benefits for vines and wine and, above all, driven by a desire to get back to the land. Even if his methods have much in common with natural wines, Henri Chauvet doesn’t want to be pigeon-holed, so he retains complete freedom to create his authentic, flavoursome wines.

About the wine

Crafted from Gamay grapes, this wine displays an intense ruby-red colour, with purple reflections typical of young, concentrated wines. The density hints at concentration, revealing a full-bodied wine with rich aromas.
The nose reveals a complex and seductive bouquet. Ripe red fruit aromas such as cherry and raspberry prevail initially, blending harmoniously with delicate floral notes reminiscent of violet or rose. The second nose reveals spicy nuances, with accents of black pepper, cinnamon and cloves, bringing depth and character to the wine.
The palate is generous and velvety, with a silky texture that coats the palate. The juicy, sweet red fruits come through fully, bringing a sensation of freshness and liveliness. The structure is nicely balanced, with supple yet present tannins that provide elegant support without overpowering the fruit. The finish is long and persistent, leaving an impression of ripe fruit and spice that lingers deliciously on the palate.
