
Information
This champagne is the brainchild of two of Vouvette et Sorbée and Benoit Doussot, two of the region’s leading names. The Pinot Noir grapes used to make this cuvée grow in the commune of Buxières-sur-Arce, in the heart of the Côte des Bar region. Each vine, ideally exposed to the south, thrives on clay soils with a high concentration of limestone. Once in the winery, the grapes ferment spontaneously using native yeasts. The wine is then matured in 350 and 500 litre tuns for 15 months.
The bright colour, complemented by fine bubbles, is enhanced by an intense bouquet, offering scents of wild strawberry, raspberry and citrus fruit combined with a superb mineral undertone. The flavourful mouthfeel reveals beautiful, elegant acidity, sublimated by a vibrant perlage, leading to a fruity, slightly saline finish.
