This cuvée, exclusively made with Chardonnay, originates from a 1.49 hectare parcel located at the top of the Beaune slopes, at an altitude of 350 metres. The vines, planted in 1992 and partially replanted in 2015–2016, thrive on a rocky clay-limestone terroir that gives the wine a unique personality. Jean and Juliette Orsoni’s organic viticulture methods emphasise the quality of the grapes and preserve the authenticity of the terroir. The meticulous harvest yields whole bunches, which are then carefully pressed. The winemaking process begins with a 48-hour cold settling of the must, before the wine is aged in 228 to 400-litre oak casks for 12 months.
This results in a fresh, light white nectar with delicate aromas of apple, lemon, pear and floral notes of white flowers. The purity and liveliness of this cuvée will delight the most discerning palates. Ready to drink now, after opening early or decanting, this elixir has an ageing potential of 4 to 6 years.
