This skin-contact Chardonnay produced by Julien Labet is a genuine masterpiece which showcases the terroir of clay and blue marl. Produced from vines planted in 1986 on clay soil with a Bajocian limestone bedrock, this wine undergoes a 16-day maceration, with 70% whole bunches, followed by 24 months of ageing, with 65% in crude amphorae.
With its slightly coppery orange colour, it offers unique aromas, combining spicy notes of ginger, cumin, juniper berry, clove and gingerbread, along with hints of candied citrus fruit, orange zest and bergamot. Delicate, fresh and suave on the palate, this wine has remarkable harmony and a slightly peppery finish courtesy of its light tannins, leaving an impression of freshness and tension.
This exceptional wine is the perfect choice for cheeses such as Comté, Epoisses, ’oat's cheese, cold Mo’t d'Or and Tomme.
